Agua Fresca de Fresa is a simple traditional Mexican strawberry drink. It is light, refreshing and a beautiful way to celebrate authentic Mexican tradition in your home. This easy Strawberry Agua Fresca recipe is perfect to serve at family gatherings, kids’ parties or when you just need a cold summer drink.

What is Agua Fresca?
The literal translation of agua fresca is “fresh water”. In my humble opinion agua frescas are one of the great highlights of Mexican cuisine. I find myself wondering why they are not staples in cultures around the world.
An agua fresca is a freshly made flavored and sweetened drink. While there are many variations, it’s typically made with a water base, blended with fruit and sugar, strained and served with ice. The result is unlike anything store bought. There are no artificial flavors. It’s not overly sweet. It’s bright, clean, cold and so refreshing.
In Mexican culture, making agua fresca is often a daily routine. Huge, beautiful glass barrels called vitroleros sit on countertops, filled to the brim with colorful waters made from everything from hibiscus flowers (jamaica) to rice and cinnamon (horchata), and of course, fresh fruits like melons and berries. It is a beautiful tradition centered around hospitality and using what is fresh and in season.

Why You’ll Love This Recipe

- Simple: You only need three basic ingredients that you already have in your kitchen.
- Real Fruit: Unlike boxed juices, this recipe highlights the pure, natural sweetness of real strawberries.
- Crowd-Pleaser: Kids love the bright pink color and sweet flavor, while adults appreciate how light and crisp it is.

About Agua Fresca de Fresa
Agua Fresca de Fresa is a light, non-alcoholic beverage made by blending fresh fruit with water and a touch of sweetness. The magic of a great strawberry agua fresca lies in its balance. It shouldn’t be as thick as a smoothie or as heavily concentrated as a fruit juice. Instead, it is meant to be a hydrating, flavored drink that lets the natural strawberry flavor shine.
Because it is so light and clean, it pairs beautifully with rich, savory, or spicy dishes. It acts as a lovely palate cleanser, cutting through the heat of traditional Mexican spices and leaving you feeling refreshed.

Ingredient Notes
- Fresh Strawberries: You will need 1 lb of fresh strawberries. Look for berries that are deep red all over, as they will have the best flavor. This recipe is perfect for peak strawberry season.
- Granulated Sugar: I use 3/4 cup of sugar to balance the tartness of the berries. You can adjust this amount to suit your preference.
- Water: You will need 6 cups of water.
How to Make Strawberry Agua Fresca
Step 1: Prep the Fruit
Start by washing the strawberries with cold water. Remove the green stems by slicing them off.

Step 2: Blend
Add the prepped strawberries, the 3/4 cup of sugar, and 2 cups of the water into a blender and blend on high for 1 to 2 minutes. The mixture should be completely smooth, bright red, and frothy. Make sure the sugar has fully dissolved.

Step 3: Combine and Serve
Pour the mixture into a large serving pitcher. Then add the remaining 4 cups of water directly into the pitcher and stir well. Pour the drink over a glass filled with ice. To make it look extra special, garnish with a few fresh strawberry slices or a small sprig of mint. Enjoy!

Tips for Success
- To Strain or Not to Strain: Traditional recipes often strain the blended fruit through a fine-mesh sieve to remove any tiny seeds or pulp for a completely smooth finish. However, if you have a high powered blender straining is usually not necessary.
- Taste Before You Chill: Always give your agua fresca a little taste test after mixing. You can adjust the sweetness by adding more sugar or more water as needed. You can also add a squeeze of lime juice to balance out the flavor.
- Use Ice Wisely: If you are serving this at a party, putting ice directly into the large pitcher will melt over time and water down the flavor. Instead you can keep the pitcher chilled in the fridge, and place ice cubes directly into individual serving glasses. Or, reduce the amount of water in the recipe to account for the ice you’ll be adding to the pitcher.
Variations and Substitutions
While this strawberry version is perfect on its own, it is also fun to customize based on what you have in your refrigerator or growing in your garden.
- Make it Creamy (Agua de Fresa con Crema): Swap out the sugar and 2 cups of the water for 1 cup of evaporated milk and 1 cup of sweetened condensed milk. It transforms the light drink into a rich, creamy treat.
- Add Herbaceous Freshness: Blend a handful of fresh mint leaves or basil leaves right in with the strawberries. Strawberry and basil make for an elevated twist.
- Brighten with Citrus: Add juice from one or two fresh limes or lemons into the pitcher. The citrus complements the sweetness of the berries and adds tang.
- Alternative Sweeteners: If you prefer to cook without refined sugar, you can substitute it with honey, maple syrup, or agave. Start with a 1/2 cup and add more to taste.

Storage Instructions
Agua fresca is best served the day it is made because the fruit and flavors are fresh. If you have leftovers, you can store the pitcher covered in the refrigerator for up to 2 to 3 days. Stir it well before serving again.
If I have a lot of leftovers, sometimes I will pour it into popsicle molds and put them in the freezer. This makes fresh, homemade but not overly sweet popsicles. My kids love them!
What to Serve With Agua Fresca
If you’re planning a party or special meal, here are some of my favorite recipes to serve alongside this fresh drink.
- Nopalitos: A versatile healthy salad made with prickly pear cactus pads, tomatoes, pepper and cilantro.
- Sopecitos: These sopes are fun to make as a family and can be catered to various palates. They are easily made vegetarian or simply with beans and cheese for picky eaters.
- Besos de Nuez: Finish off the meal with the melt in your mouth Mexican wedding cookies, also called besos de nuez. They are delightful little “kisses” of buttery pecan flavor and are a perfect match for coffee.
I love caring for my family and nourishing them with healthy, rich and delicious food. This simple agua fresca de fresa is an easy way to bring a little bit of Mexican tradition to your home and make memories with your family.
