  • Chicken: In this recipe I use boneless, skinless chicken thighs but any cut of chicken will work. Since whole chickens are more affordable and often provide better flavor, I sometimes use a whole chicken, remove the skin and cut it into 8 pieces.
  • Chipotle peppers: Use canned chipotle peppers and include the sauce that comes with them. This sauce is called adobo sauce and packs a lot of flavor and heat. There are many different brands of canned chipotle- I look for one without added sugar.
  • Mustard: Any kind of mustard will work well in this recipe. I use what I have on hand, typically a dijon mustard that has some whole grains, but a regular yellow mustard is also delicous!
  • Tomatoes: Any standard sized red tomatoes will do!
  • Onion: I like to use yellow onion in this recipe but white onion or sweet onion will also work. I recommend avoiding red onion because of how it affects the color of the sauce when blended.
  • Garlic: Fresh garlic cloves compliment the chipotle peppers wonderfully!

Step-by-Step Guide to Making Pollo Enchipotlado

Step 1: Marinate the Chicken

Rinse the chicken and trim and excess fat or connective tissue. Place in a medium bowl and add the mustard, 2 teaspoons of salt, and 1 teaspoon of pepper. Mix so that the ingredients evenly coat the chicken. Cover the bowl and place it in the refrigerator to marinate for a minimum of 10 minutes and up to 4 hours.

Step 2: Prepare the Chipotle Sauce

Start by boiling the tomatoes to enhance their natural sweetness. Wash the tomatoes well, then place in a small saucepan and cover with water. Bring to a boil and simmer for approximately 15 minutes or until the skins begin to break. Remove the tomatoes from from the water and transfer them to a blender.

Then, heat oil in a medium frying pan, add the sliced onion and whole garlic cloves. Saute them on medium heat, stirring frequently. When they begin to brown on the edges, turn off the heat and transfer them to the blender.

Step 3: Cook the Chicken

In a large skillet or Dutch oven, heat the olive oil and butter over medium heat. Add the chicken and cook until it is nice and brown, about 5 minutes on each side. You don’t need to cook the chicken all the way through since it will finish cooking in the sauce.

Step 4: Simmer the Chicken in the Chipotle Sauce

Once the chicken is browned, pour the prepared chipotle sauce over the chicken in the skillet. Bring the sauce to a simmer, cover, and let the chicken cook for 20-30 minutes, or until it’s fully cooked and tender. If you prefer a thicker sauce, you can let it simmer uncovered for the last few minutes.
