This homemade helado de fresa is creamy, sweet, and packed with fresh strawberries. It tastes nothing like the artificial pink strawberry ice cream I remember as a kid. It’s soft, rich and decadent, and you will definitely want more!

I never thought I would be the kind of person craving strawberry ice cream all the time, but here we are.

My 3-year-old son is absolutely obsessed with strawberries. So naturally, his favorite ice cream flavor is also strawberry ice cream. I decided we should try making our own at home together.

And ever since tasting this helado de fresa, I can’t stop thinking about it. It might be my favorite kind of ice cream now. Plus, making homemade strawberry ice cream with my son turned into a sweet memory that we still talk about.

What Is Helado de Fresa?

Helado de fresa is simply strawberry ice cream in Spanish, but you may also hear it called nieve de fresa. It’s a combination of cream, milk, sugar, strawberries and vanilla that, when processed in an ice cream maker, makes a delicious soft frozen treat.

This recipe has the creamy texture of classic ice cream but still highlights the fresh, juicy flavor of real strawberries.

One of my favorite parts about making it at home is controlling the ingredients. You know you’re eating real strawberries, real cream, and no artificial flavors or coloring. Plus, it’s a fun activity to do with kids.

Why Homemade Strawberry Ice Cream Is So Good

There’s just something different about homemade strawberry ice cream. The strawberry flavor tastes brighter, fresher, and more natural than anything from the grocery store.

When strawberries are in season, this recipe becomes even better because the fruit is naturally sweeter and more flavorful. The fresh berries blend into the cream and create this beautiful soft pink color.

My son loved helping mix the ingredients and cut the strawberries. He licked the spoons and bowls clean as we finished. Involving your kids in the kitchen makes recipes like this even more special.

Ingredients for Helado de Fresa

Ingredients

  • 3 cups fresh ripe strawberries, hulled and sliced
  • 1 1/2 cups sugar, divided
  • 2 3/4 cups heavy cream
  • 1 1/2 cups whole milk
  • 1 1/2 teaspoon vanilla extract
  • 4 tablespoons lemon juice

How to Make Homemade Strawberry Ice Cream

Step 1: Prepare the Strawberries

Place the sliced strawberries into a bowl with the lemon juice and 1/2 cup of the sugar. Stir everything together gently and let them sit for about 2 hours. Then, strain the berries, reserving the juices. With the berries, mash half of them with a knife or fork.

Step 2: Mix the Ice Cream Base

Using a hand mixer, combine the milk and remaining sugar on low speed until the sugar is dissolved, about 2 minutes. Next stir in the heavy cream, strawberry juice, mashed strawberries and vanilla.

Step 3: Churn the Ice Cream

Pour the mixture into your ice cream maker and churn according to the machine instructions. Usually this takes about 25 minutes. (If you’re looking to buy one, we use an old version of this basic ice cream maker.)

Five minutes before the ice cream is done, add the reserved sliced strawberries and let them mix in.

Step 5: Freeze Until Firm

Once churned, transfer the ice cream to a freezer-safe container and freeze for another 2–4 hours until firm.

Then scoop, serve, and try not to eat the whole container immediately like I did.

Tips for the Best Helado de Fresa

A few simple tricks make a huge difference when making helado de fresa or strawberry ice cream at home.

Use Fresh Strawberries

Fresh ripe strawberries create the best flavor.

Chill the Mixture First

If possible, chill your ice cream base before churning. A colder base freezes faster.

Why This Recipe Became My Favorite

This might actually be my favorite ice cream now. Because it’s homemade, the flavor is so fresh and creamy. It feels comforting and I know the ingredients are better for my body too.

Now whenever strawberries are on sale, I grab them immediately and tell my kids we have something special to make together.

Fun Ways to Serve Strawberry Ice Cream

One of the best things about homemade ice cream is how fun it is to dress up.

Here are a few fun serving ideas:

  • Serve it in waffle cones
  • Top with fresh strawberries
  • Add whipped cream
  • Drizzle with chocolate syrup
  • Sandwich it between cookies
  • Serve alongside warm brownies

You can also turn it into popsicles for a different summer treat.
