Atole de Avena

Ingredients

  • 1/2 cup rolled oats
  • 6 cups whole milk
  • 1 cinnamon stick
  • 4 ounces piloncillo brown sugar, or granulated sugar will also work
  • 2 teaspoons vanilla extract
  • Pinch of salt

Instructions

  • In a large saucepan combine 2 cups of milk, the cinnamon stick, and piloncillo on low heat. Stir frequently until the piloncillo dissolves, about 10 minutes.
  • Meanwhile, blend the remaining 4 cups of milk with the vanilla, rolled oats and salt. Blend well, about 2 minutes depending on the strength of your blender.
  • Remove the cinnamon stick from the saucepan and add the blended oats. Stir frequently over low heat until it is heated through. The mixture will begin to thicken at which point it is ready to serve. Enjoy immediately!

Notes

  • Stir constantly: Atole thickens quickly and can stick to the bottom.
  • Adjust thickness: Add more milk if it gets too thick.
  • Sweeten to taste: Everyone likes their atole a little different.
  • Serve immediately: It thickens as it cools.
