This Habanero and Mango salsa is a fresh and spicy twist on a simple pico de gallo. It’s made using fresh mango, habanero, tomatoes, onion and cilantro to make a sweet and spicy salsa that is perfect on fish tacos or with chips.

I love traditional tomato and pepper salsa but sometimes it’s nice to change it up and make this bright, colorful and fruity salsa. It’s a nice salsa to serve as an appetizer with chips, crackers and cheese too since it pairs well with all of them and looks great too.

By just dicing up a few ingredients you can have this special salsa ready for guests in only a few minutes!

Ingredient Notes

This mango salsa recipe uses simple ingredients, so choosing quality produce makes a big difference.

Mango

Look for a ripe mango that gives slightly when gently squeezed. A ripe mango will provide sweetness that balances the heat of the habanero. If you enjoy green mangoes, you can experiment with this flavor too!

Roma Tomatoes

Roma tomatoes work well because they are firm and contain less water than other varieties, but use whatever variety is available to you.

Habanero Pepper

Habaneros bring bold heat and a distinctive fruity flavor.

If you’re sensitive to spice, start with less and add more to taste. And wear gloves when chopping!

Red Onion

Red onion adds color, crunch, and a mild sharpness that complements the sweetness of the mango.

Cilantro

Fresh cilantro adds brightness and ties all of the flavors together. If you’re a cilantro hater, just leave. JK, just leave it out 🙂

Salt

  • 1/2 large mango
  • 2 Roma tomatoes
  • 1 habanero pepper
  • 1/4 red onion
  • 2 tablespoons cilantro
  • 1 teaspoon salt

How to Make Habanero and Mango Salsa

Step 1: Prepare the Mango

Carefully peel and dice the mango into small cubes, about the size of peas. Use a sharp knife and gentle hands so the mango doesn’t get smashed.

Step 2: Dice the Vegetables

Finely dice the Roma tomatoes and red onion. Try to keep the pieces really small so that the salsa has a fine texture.

Step 3: Prepare the Habanero

Because habanero peppers are very spicy, you may want to wear gloves while handling them. This prevents the oils of the peppers burning your skin or transferring to you eyes accidentally.

Open the pepper and remove the seeds and pith, similar to preparing a bell pepper. Slice the habanero lengthwise into thin strips and then chop finely across the strips.

Step 4: Chop the Cilantro

Finely chop the cilantro.

Place the mango, tomatoes, onion, habanero, cilantro, and salt in a bowl.

Gently toss until everything is evenly combined.

Step 6: Allow the Flavors to Meld & Serve

Let the salsa rest for at least 10 minutes before serving.

This allows the flavors to blend together and improves the overall taste.

Wear Gloves

Habaneros can leave oils on your skin that may cause irritation. Gloves make preparation much easier.

Dice Everything Small

Smaller pieces ensure you get a little bit of every ingredient in each bite and makes it a more delicate salsa overall.

Let It Rest

Don’t skip the resting time. Even 10 minutes helps the flavors come together beautifully.

Variations and Substitutions

Make It Milder

For less heat, substitute the habanero for a jalapeño pepper.

Add Lime Juice

A squeeze of fresh lime juice adds extra brightness and acidity.

Add Avocado

Diced avocado creates a creamy texture and helps balance the spice.

Try Pineapple

Substitute pineapple for some or all of the mango for another variation.
