Why is it Called Pico de Gallo?

“Pico de gallo” translates to “rooster’s beak” or “pecked from a rooster” in English. There are a few theories about why this fresh salsa got its name:

  • The beak theory: One theory suggests that people would eat pico de gallo by pinching the mixture between their thumb and forefinger (often with a tortilla), much like a rooster pecking at food with its beak.
  • The texture theory: In some regions of Mexico, it’s believed that the salsa’s small mince quality resembles the texture of food eaten by roosters and thus led to its name of pico de gallo.

While the exact origin of the name is unclear, pico de gallo has remained a beloved part of traditional Mexican meals, known for its bold and refreshing flavor.

What is the Difference Between Salsa and Pico de Gallo?

Let’s clear up a common question: what exactly is the difference between salsa and pico de gallo?

Both are essential elements in Mexican cuisine, but they differ in texture and preparation:

  • Salsa is usually a smooth, mashed or pureed mixture made from tomatoes, chili peppers, onions, and other additions. It can be either cooked or raw, and it’s often used as a topping or dip.
  • Pico de gallo, on the other hand, is a chunkier, fresh (raw) salsa that’s made from finely chopped ingredients rather than pureed. It’s typically made with fresh tomatoes, onions, cilantro, and chilis, offering a crisp and vibrant flavor.

Salsa tends to be more liquid in consistency, while pico de gallo is thicker and fresher due to its use of raw, chopped vegetables.

Can You Add Avocado to Pico de Gallo?

Absolutely! Adding avocado to pico de gallo is a fantastic idea and the basis of this recipe. The rich, buttery texture of avocado complements the spicy, zesty flavors of the tomato, onion and pepper base. Plus, avocado not only makes the dish more creamy and satisfying but also adds a nutritional value with healthy fats and fiber.

For this reason, avocado pico de gallo is a popular twist on the classic. Whether you’re making a batch for tacos, nachos, or simply as a dip, adding avocado is a game changer.

Ingredients

How to Make Avocado Pico de Gallo

Prepare the base ingredients:

After washing the tomatoes, dice them in small pieces and add to a medium sized bowl. Finely chop the onion, serranos, and cilantro and add to the bowl. Mix until the ingredients are combined.

Add the avocado and salt:

Dice the avocado and add it to the bowl. Add the salt and gently mix to distribute the avocado evenly being careful not to mash the avocado too much.

Taste and serve:

Let the avocado pico de gallo sit for about 10 minutes to allow the flavors to meld together. Taste and adjust the salt as needed. You can also add a squeeze of lime juice to finish it. Serve with tortilla chips, tacos, grilled meats, or any dish that could use a fresh, spicy topping!

Tips for the Perfect Avocado Pico de Gallo:

  • Use ripe but firm avocado: Overripe avocado can become mushy, while under-ripe avocado will lack flavor. Look for an avocado that’s slightly soft to the touch but still holds its shape.
  • Customize the heat: If you like spice, increase the number of serranos. For less heat, remove the seeds of the serranos before chopping. You can also substitute the serrano peppers for jalapeños which are typically less spicy.
  • Add lime: If you like extra zesty and tangy flavor, add lime juice before serving. Taste it as you add the lime to get the right level of acid for your taste preference.
